And it’s that time of month again…
Foodie Penal Reveal Day! What else did you think I meant>
This month I received a package from Katie over at The Little Spoon Blog. I must say that each month my packages get better and better. And this month I was loved everything about my package – especially the thoughtfulness that went into it.
They say good things come in small packages so I was pretty pumped to see this baby at my doorstep a few weeks ago!
Let’s see what Katie sent me…
Lara Bar Cashew Chew - clean, healthy, scrumptious and filling – check!
Almonds – I could live off almonds, no lie!
NuNaturals Orange Flavored NuStevia – I’ve been seeing these pop up on blogs all over the place lately, so I was pretty excited to finally be able to give it a try. However, I’m not sure how to use it in my recipes. Any recommendations would be wonderful!
Now on to my FAVORITE part of the package – RAW VEGAN CHOCOLATE CHIP COOKIES!
In my initial e-mail to Katie I mentioned that I follow the Tone It Up Nutrition Plan. Katie, being familiar with the plan, went right to the website and found this recipe. Let’s just say they were so good that only one made it into the picture .
I’ve already made another batch, which I plan on sharing with my friends this time…although, I secretly want to keep them all for myself.
Since Katie was gracious enough to include the recipe and the cookies are just THAT good, I figured I’d share the recipe with you today too!
Raw Vegan Chocolate Chip Cookies
2/3 cup raw almonds
1/3 cup rolled oats
3 T agave nectar
1 t vanilla extract
Dark chocolate chunks (to taste) – I used vegan chocolate chips in my own batch
In a food processor, blend almonds and oats until they reach flour texture. Add in agave nectar, vanilla and dark chocolate chunks! Roll into balls and refrigerate. ENJOY!

If you aren’t already participating in Foodie Penpals, but would like to here are a few details…
And now it’s time for some details about Foodie Penpals. In case you’re a new reader, here’s a reminder of what the program is all about:
-On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
-Foodie Penplas is open to US & Canadian residents. Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!
